Meatless Week

Starting next Monday, August 17, I'm challenging anyone who's interested to eat no meat at all for a week! We can use this thread to encourage each other, post about what we're eating, and discuss our personal reasons for limiting our consumption of meat or animal products in general. People who are already vegetarian, pescatarian, or vegan are welcome too!

So far this week, I've had cereal, leftover pasta with roasted zucchini and kohl rabi, and cheese enchiladas. What have other people been eating?

I ate soup.

Every single night all week and some of last week, I had soup. My mom really likes making soup, and since I am being anti-factory-farm-sort-of-vegan-but-I-eat-eggs-from-my-own-chickens all month, she has decided that we are going to have soup for dinner a lot since she knows how to make a lot of vegan soups.

I have also made some DELICIOUS vegan chocolate-chip zucchini bread which is great for breakfast and/or dessert.

And vegan cheese sticks. Which is not quite delicious, but I will eat it for the good of animal kind.

For people who are trying to be vegetarian while their family is not:

I would recommend having some sort of make-your-own-dinner thing. Like a taco night or spring rolls or yumm bowls. These are all things that my family does a lot, especially when company is over, because it can be accommodating for vegans, vegetarians, or people who eat meat. They will also take a bit of weight off of your parent's (or whoever cooks at your house) shoulders, since they won't have to do much cooking, only preparing ingredients, and they don't have to worry a lot about people not liking the food.

Also, soup really is a great option. There are a lot of delicious vegan and vegetarian soups in the world, and even some of the most devoted meat lovers will enjoy them.

My mom is doing this with me, so that's good! (My dad is a staunch meat-eater) we actually ate this 3 bean soup with zucchini (I think?) and sweet potatoes. Tbh I'm not a big zucchini person but it wasn't bad.

Yesterday we had Beyond Beef burgers for dinner, which are really good for people who want to be vegetarian but like meat. My family actually doesn't eat a lot of meat, mostly because my mom HATES it, xD So this isn't too hard for me. :)

Yesterday for breakfast I had a Nutella bagel and at lunch I failed a little... But we don't talk about that. This morning I had plain macaroni noodles for breakfast and a cheese quesadilla for lunch. Quesadillas are so good, vegetarian, and easy to make! So that's great. also, because I flopped yesterday, I'm going to go an extra day meatless next week.

I'm not officially doing this challenge, but Beyond Burgers SLAP they're so good. My family doesn't eat a ton of meat and my mom is rly into like "health" cooking so we have a lot of delicious vegetarian food! 

Today for lunch I had lentil salad and sauteéd cabbage, which were leftovers from last night's dinner :) A lot of the time for lunch I eat these vegetable ball things that my mom invented— They're shredded spaghetti squash, lots of greens ricotta cheese, and tomato rolled together into the shape of a large-ish ball and baked. Gonna be honest they look a little gross but I swear they taste excellent.

Yesterday, I had a tempeh grilled cheese sandwich, which was delicious! Everyone else had turkey bacon, and I felt very proud of myself XD Attaching a picture. Today I ate what everyone else was eating 'cause it was vegetarian anyways. So far, I'm feeling great about this!

You guys should watch the video called "Feeding Bill Gates a Fake Burger (To Save the World)" from a guy called Mark Rober (He also makes lots of other great sciencey/fun videos you should check out). In the video he learns about different types of meatless meat and how it's made, he also talks about the different environmental consequences of eating lots of meat, and what could change if people are less or no meat. It's really interesting and you guys should check it out.

I ALMOST made it! I succeeded until Saturday, but then today I ate sushi...and now we're having Indian food. xD Well, I count that as a success. I think it's the longest time I've gone without eating meat.

Yeah, me too... we ordered takeout from this restaurant in Saturday, and, well, I didn't really want any of the vegetarian things they had, and I love their chicken kabob. So I got that. And then I had ham and salmon on Sunday. But from now on my family is doing meatless Mondays! Good job, everyone!!
